Katie’s Kitchen- Banana Muffins

I stumbled upon this recipe a few years ago and it’s a great go to if you don’t have much time. I like to make these if there is someone new who moves into the neighborhood or if I forget about an event that I’m supposed to bring a baked good too (it’s embarrassing how often I forget things!)


  • Yellow cake mix (any brand will work, personally I like Duncan Hines but I also like whatever’s on sale 😉
  • 4 overly ripe banana’s
  • Optional: dried cranberries, semi-sweet chocolate chips or almond slivers
  • 1 tbs. honey
  • 2 tsp. cinnamon


  1. Mash the bananas, honey, and cinnamon together until smooth (it’s not going to be perfectly smooth just make sure there aren’t any large chunks of banana)
  2. Add in your cake mix and whatever optional ingredients you want
  3. Blend all ingredients together, it’s important to make sure there aren’t any pockets of dry ingredient that aren’t fully mixed in
  4. Spray your muffin tin with cooking spray or coat with butter
  5. Pour muffin mix into the tin and bake at 350 degrees for 16-18 minutes

These aren’t what I would consider muffin texture, because of the cake mix it’s definitely more of a cake consistency. However, it’s super delicious either way. These muffins are also great if you have a toddler who is really starting to get into trying different foods. We gave a couple pieces to my friends son when I first found this recipe and he loved it. He may have just enjoyed smashing it up and playing with it like Play-Doh but whatever floats your boat right:)
